Macaroni Salad Recipes

On this page is a variety of Macaroni Salads you can make, beginning with my very own recipe.

I think the trick to a good Macaroni Salad, is not to let the macaroni cook too long, then chill immediately in cold water.

My Basic Macaroni Salad Recipe

  1. 1 egg boiled with 1 cup dry elbow macaroni in water until tender, 7 to 10 minutes. While the macaroni is boiling, chop some onion, celery or whatever you want in it, and put in a large bowl.
  2. Drain off hot water, and add cold tap water to quickly chill the cooked macaroni. In 10 minutes, add more cold water and let sit.
  3. Crack and peel the egg.
  4. Drain the cooked macaroni, cool in cold tap water, and add to the large bowl.
  5. Add about a half cup mayonnaise and carefully stir it all up.
  6. Add more mayonnaise if needed, or add a little milk to make it creamier.
  7. Chill several hours or overnight.
Macaroni Salad Additions
  • you can use salad dressing instead
  • 1/2 small onion chopped (optional)
  • 1 or 2 stalks of celery sliced in small pieces(optional)
  • 1/4 cup relish
  • 1 Tablespoon sugar (optional)
  • 1 small squirt of teaspoon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon celery seed (optional)

Macaroni Salad with Tomato

    Cook shells or elbow macaroni

    Add:

  • 1 chopped tomato
  • 2 stalks celery sliced
  • chopped onion
  • chopped dill pickles
  • 1 tsp. mustard
  • 1/2 cup grated Parmesan Cheese
  • dash of pepper
  • 3/4 cup mayonnaise

Ham and Macaroni Salad

  • 3 cups cooked elbow or shell macaroni
  • 1/2 cup mayo or salad dressing
  • 1 Tablespoon mustard
  • 1/2 top salt and pepper
  • 1/4 cup diced onion
  • 3 hard cooked eggs - chopped
  • 2 cups diced ham

Rinse macaroni with cold water, drain. Mix remaining ingredients together in a large bowl. Add macaroni. Mix and sprinkle with paprika. Chill 1 hr. Serve on a bed of lettuce or tomato wedges.

Parmesan Macaroni Salad

  • 2 cups elbow macaroni - cooked and drained
  • 1 cup chopped tomatoes
  • 3/4 cup celery slices
  • 1/3 cup chopped onion
  • 1/3 cup chopped dill pickle
  • 1 tsp. prepared mustard
  • 1/2 cup grated Parmesan Cheese
  • dash of pepper
  • 3/4 c mayonnaise

Combine all ingredients except mayonnaise, toss lightly, then add mayonnaise, mix well. Chill. Add additional mayonnaise, sprinkle with additional cheese before serving. Makes 6 servings.

Italian Pasta Salad

There is a variety of different ingredients you can add. It pretty much depends on personal taste. Some people like vinegar and oil instead of mayonnaise. See recipe below.

Cook rinse and drain 3 cups curly pasta noodles. Mix the following ingredients and stir into pasta:

  • 1 Tablespoon olive oil or vegetable oil
  • 1/4 cup vinegar
  • 2 finely chopped garlic
  • 2 med tomatoes
  • 1 bell pepper chopped
  • 2 green onions chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup cheese diced

Macaroni Salad for a Crowd

  • 2 lbs. shell macaroni
  • 1 lb. carrots
  • 16 oz frozen peas
  • 1/2 lb cubed American Cheese
  • 5 stalks celery, diced
  • 2 onions, chopped
  • 1 green pepper
  • Dressing:

  • 1 qt. mayonnaise
  • 1 c. sugar
  • 1/2 c. vinegar
  • 1 1/2 c. evaporated milk
  • 1/8 c. mustard
  • Garlic salt to taste
