Easy Casserole Recipes

I should spend a lot more time on this casserole page. There are a lot of good recipes here that sounds tasty and simple to make.

As you know, most casseroles call for some sort of "can of soup," usually a cream soup. Casseroles became very popular during the early 1970's and the cream soups were a bit cheaper to buy, usually 2 cans for a dollar. Tomato soup and Chicken Noodle soup were 4 cans for a dollar, and sometimes 5 cans for a dollar if you found them on sale.

This first recipe is simply how to make macaroni and cheese from scratch, probably the most popular of them all.

Easy Macaroni and Cheese

  • 1 cup dry elbow macaroni
  • 4 slices American Cheese
  • a little milk
  • a little butter
  • salt and pepper to taste

Cook macaroni according to package instructions. Drain and rinse. Leave the hot macaroni in the pot and put it back on the stove on low heat. Tear sliced American cheese into pot and stir until melted. Add a little milk if thin macaroni and cheese if desired. Add more slices of American cheese if you like it real cheesy.

Velveeta Cheese and Macaroni

  • 8oz. macaroni
  • 2 qts. cold water
  • 1 tsp. salt
  • 4 Tblsp. butter or margarine
  • 1 sm. pkg. Velveeta cheese

Put macaroni in cold water and cook, stirring frequently till macaroni starts to boil, then cook 10 minutes.

Drain and rinse in colander. Put back in pan. Add 4 tablespoons margarine or butter, Velveeta cheese chopped, and milk. Stir and cook until cheese melts.

Quick Goulash

  • 1 pkg. Macaroni and Cheese Mix
  • 1 lb ground beef
  • 1/4 c. onion
  • 8oz can tomato sauce
  • 1/4 c. catsup

Prepare Macaroni according to directions. Brown beef and onion and drain. Combine all and heat thoroughly. Serves 6 to 8.

Casseroles with Green Beans

Green Bean Casserole with Cheese

  • 3 pkg. frozen French green beens
  • 1 can cream of mushroom soup
  • 4 oz can water chestnuts
  • 1 tbsp. Worcestershire sauce
  • 1 pkg slivered almonds
  • 8 oz Cheez Whiz
  • 4 oz can of mushrooms
  • Salt and Pepper to taste

Cook beans according to directions on package. While beans are cooking mix remaining ingredients except almonds. Drain beans well, and add to other ingredients while beans are still hot. Pour into a 3 quart casserole, sprinkle almonds on top, bake uncovered at 350 for 30 minutes. Yields 10 to 12 servings.

Hamburger and Green Bean Casserole

  • 1 lb. ground beef
  • 1 small onion
  • 2 T fat
  • 1 tsp salt
  • 1 can tomato soup
  • 1 pkg or can of green beens drained

Brown meat and onion, season, Add soup and beans. Pour into a greased casserole or square pan. 8 1/2 x 8 1/2. Drop biscuit batter by the tablespoon on top. Bake at 425 for 12-15 min. or until biscuits are brown. Add a salad for a complete meal.

Casseroles with Potatoes

Potato Casserole

  • 6 good sized potatoes, boiled, cooled, grated
  • 1 cup grated American Cheese
  • 1 can cream chicken soup
  • 5 or 6 green onions, sliced
  • 1/2 stick margarine
  • 1/2 pint sour cream

Melt butter in saucepan. Add soup and half of the cheese. Stir until cheese is melted. Add sour cream and stir, don't boil, then add onions. Mix and pour over potatoes. Stir until well blended and put in a buttered casserole. Top with rest of cheese. Bake in 350 oven until bubbly and brown, about 30 minutes.

Beef and Tater Tot Casserole

  • 1 lb lean ground beef
  • 1/2 pkg Lipton's onion soup mix
  • 1 can mushroom soup
  • 1 package tater tots
  • 1 cup grated cheese of choice

Press the raw ground beef in the bottom of a square baking dish. Sprinkle with the Onion Soup mix. Spread the mushroom soup over the top. Place a layer of frozen tator tots on top. Bake for 50 minutes, sprinkle with grated cheese and bake 10 more minutes.

Bake at 350 for 1 hr. You can double the recipe and use a 13 x 9" baking dish if you have a large family.

Tater Tot Casserole

  • 2 lbs. ground beef
  • 1 small onion, chopped
  • 1 can mushroom soup
  • 1 lb. pkg. Tater tots
  • 1/2 cup celery, cut fine
  • 1 can cream of celery soup
  • 1 can cream of mushroom soup

Preheat oven to 350 degrees. Brown beef and onion; add celery and soup. Place in 2 qt. buttered casserole dish and cover with Tater Tots. Bake 30 minutes.

Six Layer Dinner

  • 3 or 4 sliced potatoes
  • 1 cup uncooked quick cooking rice
  • 2 lbs. browned ground beef
  • 2 med onions, cut up
  • 1 large green pepper, chopped
  • 1 16 oz can tomato sauce
  • 1 16 oz can tomatoes, chopped

  • LAYERS:
  • 1st layer - sliced potatoes to cover bottom of greased baking dish.
  • 2nd layer - uncooked rice
  • 3rd layer - ground beef
  • 4th layer - onions
  • 5th layer - green pepper
  • 6th layer - tomato sauce & tomatoes mixed together
  • Sprinkle with salt and pepper.

Cover with lid or aluminum foil. Bake at 350 for 1 to 1 1/2 hours. Serves 5.

Hash Brown Potato Casserole

  • 1 lb. frozen hash browns
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 can cream of chicken soup
  • 1 stick margarine
  • small carton of sour cream
  • 4oz. shredded cheddar cheese
  • crushed corn flakes

Saute celery and onions in margarine; add to thawed potatoes. Mix in sour cream. Add cream of chicken soup. Mix altogether and pour into buttered baking dish. Put shredded cheese on top. Sprinkle with corn flake crumbs. Bake at 350 for 50 minutes or a little less.

Dakota Dish

  • 2 lbs. ground beef
  • Onion
  • 5 medium potatoes (cubed)
  • 1 large can pork and beans
  • 1 large can tomatoes

Brown together ground beef and onion. In large casserole mix together with beans, tomatoes, and potatoes. Potatoes can be cooked a little to speed up baking. Bake at 350 degrees for 1 hour

Dinner in a Dish

  • 1 lb. ground beef
  • 3 large raw, sliced potatoes
  • 1 can creamed corn
  • 1 tsp. salt
  • 3 onions, sliced
  • 1 can tomato soup

Brown and drain hamburger. Sprinkle with salt and place in a 2 qt. casserole dish. Layer sliced potatoes, onions, and creamed corn. Top with tomato soup. Bake at 350 degrees for 1 1/2 hours.

More Ground Beef Casseroles

Texas Hash

  • Put 3 Tablespoons Crisco or oil in a frying pan.
  • Slice 1 large onion and brown it in fry pan until yellow.
  • Add 2 chopped green peppers and saute.
  • Add 1 lb ground beef and brown
  • Add 1/2 cup uncooked rice
  • 2 cups canned tomatoes
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • a little sugar

Bake in a covered dish at 375 1 hr. This is very good and makes a nice casserole.

Ground Beef Casserole

  • 1 lb. ground beef
  • 1 can cream of mushroom soup
  • 1 cup chopped celery
  • chow mein noodles
  • 1 can cream of chicken
  • 1 can vegetable soup
  • 1/3 cup regular rice
  • 1 cup chopped onions

Cook celery and onions in water and boil for 20 minutes. Drain. While above mixture is cooking brown 1 pound ground beef. Drain excess grease.

Mix soups, beef and vegetables in 11x7 pan. Bake at 350 degrees for 1 hour. Add large can chow mein noodles. Bake another 15 minutes.

Other Casseroles with Noodles

Tomato Soup Casserole

  • 1 lb. ground beef
  • 2 med. onions
  • 1 pkg. noodles
  • 1 can tomato soup
  • 1 can beans in chili sauce
  • cheese - 4 or 5 slices

Cook and drain one package of noodles. Place in the bottom of casserole. Use 1/2 can of Tomato Soup now, mixing it with the noodles. Saute 1 or 2 onions in 1 Tblsp. of fat. Brown 1 pound ground beef in same skillet. Add 1 can chili beans in chili sauce.

Put meat, onion and chili beans mixture over noodles. Add rest of can of tomato soup. Place cheese slices over top and put into 350 degree oven for about 20 minutes or until hot and bubbly.

Vegetable Casserole

  • 3 cans Veg-all (mixed vegetables), drained
  • 1-4 oz can water chestnuts, drained and sliced
  • 1 large jar Cheeze Whiz
  • 2 sticks oleo (margarine)

Melt 1 stick oleo in large casserole, add Cheese Whiz and mix well. Add Veg-all and water chestnuts and stir well. For topping, melt 1 stick oleo and 1 tube Ritz crackers, crushed. Mix well. Crumble over top of casserole. Bake 350 for 30 minutes.

Wesetti Casserole

  • 1 1/2 lbs. ground beef
  • 1 small onion, finely chopped
  • salt and pepper to taste
  • Dash Worcestershire sauce
  • Dash hot sauce
  • 5 oz. spagetti
  • 1/2 lb. grated cheddar cheese
  • 1 can tomato soup
  • 1 can cream of mushroom soup

Saute beef and onion. Add salt, pepper and sauces. Cook slowly until meat is tender. Cook spagetti as package directs. Drain. Add cheese. Stir until cheese is melted. Stir in meat mixture and soups. Pour into greased 1 1/2 quart casserole. Cover with crumbs. Dot with butter. Bake in 350 oven 45 minutes.

Casseroles with Cabbage

Cabbage Au Gratin

  • 1 medium head cabbage, coarsely chopped
  • 4 tbsp. butter
  • 4 tbsp. flour
  • 2 cups hot milk
  • Salt and pepper to taste
  • 3/4 cup cheddar cheese (mild or sharp)
  • 3 tbsp. melted butter
  • Ritz cracker crumbs & 1 stick of butter

Cook cabbage in salted water until tender. Put 4 tbsp. butter in skillet, melt and stir in flour. Season with salt and pepper, add hot milk and stir until slightly thickened. Drain cabbage and layer in a buttered dish, alternating with cheese, paprika, and the white sauce. Mix 1 tube Ritz cracker crumbs with 1 stick of melted butter and spread over top of casserole. Bake 15 to 20 minutes at 400 until brown and bubbly.

Skillet Cabbage

  • 4 cups sliced cabbage
  • 2 cups diced celery
  • 2 chopped tomatoes
  • 1 green pepper, cut into strips
  • 2 large onions sliced
  • 1/2 cup bacon drippings
  • 1 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tsp. sugar
  • No water

Combine in skillet and cook covered for 10 minutes or until tender.

Zesty Yellow Squash

Use this recipe for Zesty Yellow Squash to make an easy side dish of boiled squash and green peppers. Very simple.

Thanksgiving Squash

This recipe is a great way to use some squash for the holidays. It uses the dry stuffing mix, sour cream, and cream of chicken soup. It cooks like a casserole.
